Marinated Goat Cheese

Perfect make-ahead dish for summer enteraining!
Ingredients:
1 lb cold chèvre
2 cloves garlic, minced
2 tbs chopped fresh rosemary
4 tbs chopped fresh basil
¼ tsp hot red chili flakes
1 cup extra virgin olive oil
Thinly-sliced baguettes, pitas or crackers for serving
Instructions
Slice cheese into 1/2 inch rounds.
Arrange in one layer on rimmed serving dish. Place garlic around the cheese.
Sprinkle cheese with herbs and chili flakes
Cover evenly with olive oil
Cover dish and marinate a few hours at room temperature, or in fridge for up two days.
When ready to serve, allow cheese to come to room temperature if refrigerated.
