Oatmeal Cookie Cups

The best oatmeal cookie cups from my cycle instructor Rachel! She brought these to us for a post-ride treat, they make a great little breakfast treat or mid day snack…
Ingredients:
1 cup ground oatmeal (I just put oats into food processor and pulsed until fine)
1 cup ground almonds (I just used almond flour)
1 cup whole wheat flour (I used all purpose)
1 tsp cinnamon
1/4 cup safflower oil (I used coconut)
1/2 cup maple syrup
Instructions
Mix everything together until well combined
Mold into a cup shape and fill the center with your favorite fruit preserve
Bake at 350 for about 15 minutes until golden
