For The Skewers

  • Small mozzarella balls

  • Soppressatta

  • Cherry tomatoes

  • Basil

Instructions

The night before hosting you can prep the following …

  • Make the pumpkin seeds by combining all ingredients in a bowl. Spread onto a baking sheet covered in parchment paper and roast for 35 - 40 minutes at 275. Allow to cool completely before storing in a bag or container.

  • Make the salad dressing, by shaking the olive oil, grated shallot, mustard, maple syrup, vinegar, salt and pepper in a mason jar. Pour over kale and massage until its softened. Do not top with the pumpkin seeds. Cover and leave in fridge.

  • Assemble the skewers, putting one olive, mozzarella ball, soppressatta, tomato and piece of basil on a pick. For the basil and soppressatta i like to roll them up so they don't unfold. Store in a large tupperware or airtight container with layers of paper towel in between.

  • The night before you can also prep your pizza ingredients if needed. Toast the pecans or walnuts for the pizza if you didn't buy them toasted and shred the cheese if you bought it in blocks. This always saves time day of.

To make the pizzas…

Preheat oven to 425. Brush store bought crusts with the olive oil, salt and pepper and bake them for 4-6 minutes. Set aside.

Add apples to a skillet with apple cider. Cook until they are tender. Remove the apples with a slotted spoon and layer onto pizza crusts; Keep the juice in skillet and allow to cool completely.

Whisk the cornstarch into the reserved apple cider (if the cider is still hot, it will clump, so make sure its cooled off). Add cinnamon and honey. Simmer over medium until the sauce thickens (about 5 minutes).

Spread the sauce over the apples. Sprinkle on the toasted nuts and cheese, dividing everything evenly between the two crusts.

Bake pizzas for another 10 minutes or until brown and crisp.

To assemble the salad…

Remove salad from fridge; Fluff lettuce with a fork. Season to taste with salt and pepper. Add the pumpkin seeds.

To finish the skewers…

Add skewers to the platter you plan to serve them on. Brush or drizzle olive oil, plus salt and pepper.
