Broccoli Pesto Pasta

EASY

No blender! No gadgets! This broccoli pesto pasta is perfect for weeknights.

Ingredients:
  • 1 large head of broccoli

  • 3 cloves of garlic

  • 2/3 cups pine nuts

  • 3/4 cup olive oil

  • 3/4 cups grated parmesan cheese

  • 1 lemon

  • Salt & pepper to taste

Instructions
  • Wash broccoli. Cut off the flowers. Peel and slice the stem. Steam the broccoli until tender.

  • Place broccoli, garlic, pine nuts and cheese on a cutting board.

  • Chop until all ingredients are super fine.

  • Mix the broccoli mixture with olive oil, lemon and salt and pepper taste.

  • Combine pesto with warm pasta.
