Greek Shrimp Pitas

A quick and easy recipe for Greek shrimp pitas with hummus, veggies, and feta.

Ingredients:
  • 1 lb shrimp (peeled & deveined)

  • 1 lemon

  • 2 cloves garlic, minced

  • 1.5–2 tsp dried Greek seasoning

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 4 pitas

  • 1/2 cup hummus

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/3 cup crumbled feta

Instructions
  • In a bowl, combine shrimp with half the lemon juice, garlic, Greek seasoning, olive oil, and a pinch of salt and pepper

  • Let marinate for 10–20 minutes

  • Dice cucumber and tomatoes. Toss with the remaining lemon juice, salt, and pepper

  • Heat a skillet over medium-high heat. Cook shrimp for 2–3 minutes per side, until pink

  • Warm the pitas, spread hummus inside each pita, add cooked shrimp, tomato-cucumber salad, and a sprinkle of feta
