Farro Salad With Seared Halloumi

Every time the weather warms up, I think of this salad. It's my sister's recipe, and it's perfect for a light dinner — with leftovers that make a great lunch.

Ingredients:

For the salad…

  • 1 cup of farro

  • 1 8ox package of Halloumi

  • 1 Mango

  • 1 Honey crisp apple

  • 1 Shallot

  • 2 bell peppers

  • 1/2 cup pistachios

For the dressing…

  • 2 tbs apple cider vinegar

  • 1/2 lemon

  • 1 tsp Dijon mustard

  • 1 tsp honey (adjust to taste)

  • 1/2 shallot, finely minced

  • 1/4 cup olive oil

  • Salt & pepper to taste

Instructions
  • Cook farro according to package instructions. Once done, spread it out or fluff it up to let it cool completely.

  • Chop the mango, apple, and bell pepper into bite-sized pieces.

  • In a large bowl, combine the cooled farro with the chopped mango, apple, and bell pepper.

  • Mine the shallot. Set half aside for the dressing, and add the other half to the salad.

  • Add the pistachios to he bowl

  • Slice the halloumi into 1/2 inch thick pieces and sear in a hot skillet until golden brown on both sides.

  • Once browned cut halloumi into smaller pieces and add to the salad.

  • While the halloumi is cooking, mix the dressing using the reserved shallot

  • Toss gently to combine, and serve
