Farro Salad With Seared Halloumi

Every time the weather warms up, I think of this salad. It's my sister's recipe, and it's perfect for a light dinner — with leftovers that make a great lunch.
Ingredients:
For the salad…
1 cup of farro
1 8ox package of Halloumi
1 Mango
1 Honey crisp apple
1 Shallot
2 bell peppers
1/2 cup pistachios
For the dressing…
2 tbs apple cider vinegar
1/2 lemon
1 tsp Dijon mustard
1 tsp honey (adjust to taste)
1/2 shallot, finely minced
1/4 cup olive oil
Salt & pepper to taste
Instructions
Cook farro according to package instructions. Once done, spread it out or fluff it up to let it cool completely.
Chop the mango, apple, and bell pepper into bite-sized pieces.
In a large bowl, combine the cooled farro with the chopped mango, apple, and bell pepper.
Mine the shallot. Set half aside for the dressing, and add the other half to the salad.
Add the pistachios to he bowl
Slice the halloumi into 1/2 inch thick pieces and sear in a hot skillet until golden brown on both sides.
Once browned cut halloumi into smaller pieces and add to the salad.
While the halloumi is cooking, mix the dressing using the reserved shallot
Toss gently to combine, and serve
