Dinner In A Pumpkin

My Grandma Sally’s famous ‘Dinner in a Pumpkin’ is always a crowd-pleaser! Perfect for a fall festival feast or a cozy Sunday dinner, it’s as festive as it is delicious.

Ingredients:
  • 1 4 -5 lb Pumpkin

  • 2 -3 tbs butter

  • 1 lb ground beef

  • 1 onion, chopped

  • 2 cloves of garlic, minced

  • 1 cup rice

  • 15 oz can of tomatoes

  • 4 cups beef broth

  • 1 - 1 1/2 cups shredded cheese for topping

Instructions
  • Preheat oven to 350

  • Hollow out the pumpkin, saving the top for a lid

  • Brush the inside of the pumpkin with melted butter and salt

  • In a skillet sauté the beef, onion, minced garlic and rice

  • When the beef has browned, add tomatoes, beef broth salt and pepper

  • Close the lid of the pumpkin, and bake for 1 1/2 hour until fork tender

  • For serving, scoop out some of the stew, with the tender pumpkin. Top with melted cheese, and crusty bread for serving!
