Dinner In A Pumpkin

My Grandma Sally’s famous ‘Dinner in a Pumpkin’ is always a crowd-pleaser! Perfect for a fall festival feast or a cozy Sunday dinner, it’s as festive as it is delicious.
Ingredients:
1 4 -5 lb Pumpkin
2 -3 tbs butter
1 lb ground beef
1 onion, chopped
2 cloves of garlic, minced
1 cup rice
15 oz can of tomatoes
4 cups beef broth
1 - 1 1/2 cups shredded cheese for topping
Instructions
Preheat oven to 350
Hollow out the pumpkin, saving the top for a lid
Brush the inside of the pumpkin with melted butter and salt
In a skillet sauté the beef, onion, minced garlic and rice
When the beef has browned, add tomatoes, beef broth salt and pepper
Close the lid of the pumpkin, and bake for 1 1/2 hour until fork tender
For serving, scoop out some of the stew, with the tender pumpkin. Top with melted cheese, and crusty bread for serving!
