Summer Vegetable Casserole

This is a great way to use up all of those summer vegetables! Simple & delicious.

Ingredients:
  • 1 zucchini

  • 1 large red onion

  • 2 yellow squash

  • 2 medium tomatoes

  • 1 cup Cheddar cheese, shredded

  • Salt and pepper to taste

  • ½ cup butter, melted

Instructions
  • Preheat oven to 350°F.

  • Slice each of the vegetables into rounds. In a medium casserole dish, layer the vegetables in order they are listed

  • Between each layer, sprinkle with cheese, salt and pepper.

  • Drizzle butter over the top. Bake at 350°F for 30-40 minutes.
