Summer Vegetable Casserole

This is a great way to use up all of those summer vegetables! Simple & delicious.
Ingredients:
1 zucchini
1 large red onion
2 yellow squash
2 medium tomatoes
1 cup Cheddar cheese, shredded
Salt and pepper to taste
½ cup butter, melted
Instructions
Preheat oven to 350°F.
Slice each of the vegetables into rounds. In a medium casserole dish, layer the vegetables in order they are listed
Between each layer, sprinkle with cheese, salt and pepper.
Drizzle butter over the top. Bake at 350°F for 30-40 minutes.
