Santa Rosa Chicken Salad

Best served chilled in the summer!

Ingredients:

For The Salad

  • 3 cups cooked wild rice (about 1 cup of uncooked rice)

  • 3 chicken breasts cooked and chopped

  • 4-5 green onions chopped

  • 1 red bell pepper diced

  • 3 oz sugar snap peas, chopped

  • 1 cup roasted pecans or almonds

  • 2 medium sized avocados chopped

For The Dressing

  • 2 garlic cloves minced

  • 1 tablespoons dijon

  • 1/2 teaspoon salt

  • 1/4 sugar (sub honey)

  • 1/4 teaspoon pepper

  • 1/3 cup seasoned rice vinegar

  • 1/3 cup oil

Instructions
  • Cook the rice according to package directions. Allow to cool completely

  • Add the remaining salad ingredients

  • Combine all the dressing ingredients in a jar and shakeuntil well-combined. Add additional salt and pepper to taste, if needed. And pour over salad

  • Salad gets better in the fridge!
