Santa Rosa Chicken Salad

Best served chilled in the summer!
Ingredients:
For The Salad
3 cups cooked wild rice (about 1 cup of uncooked rice)
3 chicken breasts cooked and chopped
4-5 green onions chopped
1 red bell pepper diced
3 oz sugar snap peas, chopped
1 cup roasted pecans or almonds
2 medium sized avocados chopped
For The Dressing
2 garlic cloves minced
1 tablespoons dijon
1/2 teaspoon salt
1/4 sugar (sub honey)
1/4 teaspoon pepper
1/3 cup seasoned rice vinegar
1/3 cup oil
Instructions
Cook the rice according to package directions. Allow to cool completely
Add the remaining salad ingredients
Combine all the dressing ingredients in a jar and shakeuntil well-combined. Add additional salt and pepper to taste, if needed. And pour over salad
Salad gets better in the fridge!
