Chocolate Chip Zucchini Bread


  • 3 cups AP flour
  • 2 cups granulated sugar
  • 3 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 3 eggs
  • 1 cup vegetable oil
  • 3 tsp vanilla extract
  • 2 cups shredded zucchini
  • 1 cup dark chocolate chips
  • 1/2 cup milk chocolate chips


  • Preheat oven to 350 degrees and line a 8x4in loaf tin with parchment paper
  • In a large bowl, combine all dry ingredients, including flour, sugar, cinnamon, baking soda, baking powder, and salt
  • In a medium bowl whisk together the eggs, vegetable oil, and vanilla; combine wet ingredients with the dry and stir until just combined
  • Pat the zucchini with a dry paper towel to absorb some of the moisture; fold into the batter along with the chocolate chips
  • Bake for 60 min. or until a toothpick comes out clean, and enjoy with salted butter and jam!
