Cacio e Pepe

To play homage to Skye and Burke’s Italian honeymoon in Too Good To Be True by Carola Lovering, we whipped up this dreamy Cacio e Pepe… which literally translates to cheese and pepper! SUPER easy to make, and certainly a dish that IS too good to be true. You can find so many wonderful recipes out there for this dish.. this is one that we have had written down in our kitchen for years, and works like a charm!


  • 6 oz spaghetti
  • 3 tbs unsalted butter
  • 1 tsp fresh ground black pepper
  • 3/4 cup grated parmesan cheese


  • Bring a large pot of water to a boil, add a tsp or so of salt to season the water
  • Once the water is boiling, add the pasta; cook until al dente
  • When the pasta is ready, drain and reserve 3/4 cups of the water; set aside
  • In a separate large pot, melt 2tbs of the unsalted butter add the cracked pepper and cook for an additional minute
  • Add the reserved pasta water to the butter and pepper; bring to a simmer
  • Add the pasta, remaining 1 tbs of butter and the cheese; stir until cheese has melted
