Shaved Brussels Sprout Salad

This is one of those fabulous salads that you can make ahead of serving (yes, you can even dress it!) and it won’t get soggy. This is because of the Brussels sprouts, which I actually have found to become more enjoyable as they sit and soak in that delicious, lemony dressing!

With just a few ingredients and minimal steps – particularly if you are able to find the Brussels sprouts pre-chopped – you will have yourself a delicious and impressive salad in MINUTES. This could also make a wonderful main dish if you were to add some grilled shrimp or chicken, to punch it up! Enjoy 🙂

Oh, and before we jump in, this recipe was inspired by the amazing and thought-provoking novel, Strangers and Friends by J. Courtney Sullivan. There was not a lot of food-references to choose from in this novel (don’t let that hold you back, its an amazing book!), however there is one scene when one of the characters, Sam, is out to dinner with her mother at a restaurant, and they order Brussels sprouts 😉

Ingredients

For the salad:

  • 1 package of shaved Brussels sprouts (if you can’t find the pre-shaved in the store, then buy them whole and run them through a food processor!)
  • 1 small red onion, thinly sliced
  • 1 green apple, thinly slices
  • 1/2 cup toasted pine nuts (can sub walnuts, pecans, etc)
  • Optional: shredded parmesan cheese

For the dressing:

  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1/2 lemon juiced
  • 1 tsp honey
  • salt + pepper to taste

Steps

  • In a large bowl combine the Brussels sprouts, onion, apple, and nuts
  • In a mason jar, combine all ingredients for the dressing and shake until well combined
  • Toss the dressing generously into the salad, and enjoy!
