Roasted Eggplant

Eggplant is such a luscious vegetable to cook with, as it is so spongy and will absorb in all of the flavors that you are working with. In this case, we were inspired to use Asian seasonings such as garlic, ginger, and sesame to create this beautiful roasted eggplant dish.


  • 2 medium eggplants
  • 3 gloves of garlic, minced
  • 1 tsp minced ginger
  • 1-2 tbs sesame oil
  • 2 tbs rice vinegar
  • 2 tsp chili sauce
  • salt


  • Preheat oven to 400 degrees
  • Dice the eggplants into 1 inch cubes
  • Place chopped eggplant into a baking dish and drizzle the sesame oil; add the minced garlic, ginger and salt
  • Using a spoon or your hands, toss the eggplant and seasonings until evenly coated
  • Place in oven for 35-40 min or until the eggplant has shrunk substantially in size
  • Allow the eggplant to cool; Then in a bowl, toss the roasted eggplant with the rice vinegar and chili sauce
