Pear & Gorgonzola Quesadillas


*Makes 2 quesadillas, 6 triangle slices

  • 2 large flour tortillas
  • 1 ripe pear, sliced into thin slices
  • Crumbled Gorgonzola cheese (can sub white cheddar, goat, etc.)
  • 2 tbs fig jam
  • 1 tbs salted butter


  • In a large skillet, heat 1 tbs of butter over medium/low heat until melted
  • Lay out one tortilla and spread 1 tbs of fig jam on top; Sprinkle on some of the crumbled Gorgonzola and lay out the pear slices
  • Fold the tortilla in half, and place on the skillet; Heat for 4-5 min on each side
  • Repeat the steps above for the next tortilla
