Lamb “Taco” Peppers

We used mini peppers for this recipe (appetizer-friendly) but you can easily use regular size, and add more filling to create a delicious dinner. Also if you do not enjoy lamb, you can easily substitute ground beef, turkey, or chicken.

  • 12 mini peppers
  • 1 tbs olive oil
  • 1 lb ground lamb
  • 4 tsp dijon mustard
  • 4 tsp Worcestershire sauce
  • 2 tsp garam masala
  • 1 small onion, diced
  • Shredded cheese

  • Wash the peppers, slice them in half and scoop out anything inside
  • Lay the peppers on a baking sheet, so that the scooped out side is facing up
  • In a bowl, combine the lamb, mustard, Worcestershire sauce, and garam masala; set aside
  • In a skillet, heat 1 tbs of olive oil and add the chopped onion; cook for about 6 min, until fragrant and slightly translucent
  • Add the lamb mixture to the onion, and stir until all ingredients come together and the lamb has completely cooked through
  • Use a spoon to fill each pepper and place a little sprinkle of cheese on each; place under the broiler for about 5 minutes or until the cheese is bubbling
