Lucky New Year Bites

OKAY so apparently eating black beans on New Year’s Day will bring you good luck for the REST OF THE YEAR?!?! We wish we knew this on Jan. 1, 2020 …. 😉

These Lucky New Year Bites are so delicious. The key? Using crusty, crunchy cornbread as the base. It is a nice change of pace from the usual sliced baguette and compliments the black bean flavor wonderfully.


*makes 8 bites

For the cornbread bites:

  • 2 mini cornbread loaves, sliced (if you can’t find the mini-sized loaves, just use traditional and cut out 8 small squares. Mini cornbread muffins also work!
  • 1 can black beans, rinsed and drained
  • 1/4 red onion, minced
  • Juice from 1 lime
  • Salt & pepper

For the avocado cream:

  • 1/2 avocado
  • 1 cup Greek yogurt
  • Juice from 1 lime
  • Optional: 5 basil leaves
  • Salt & pepper to taste


  • Preheat oven to 350 degrees; Line a baking sheet with tin foil and place the cornbread slices on top
  • Brush each cornbread slice with olive oil or butter; Sprinkle with a touch of sea salt; Place in the oven for 10ish minutes until the cornbread is toasted (you can also use the broiler-setting to speed things up)
  • In a food processor, pulse the black beans a few times until they are chopped up. Make sure not to overdo this step, we don’t want a paste.
  • Use a spoon to stir in the red onion, lime juice and salt and pepper
  • Remove the cornbread from the oven and allow to cool; Top each cornbread with the bean mixture
  • In a blender or food processor, combine all ingredients for the avocado cream; Blend until smooth
  • Drizzle the cream over the bites, and enjoy!
