Baked Oatmeal with Caramelized Bananas and Chocolate Chips

Alright! So this is a little off-brand for us. We rarely feature breakfast dishes, and we are not shy about the fact that most BBTP recipes include butter, cheese, sugar, and carbssss (all the good stuff).

HOWEVER this recipe for baked oatmeal is just too good not to share!

The surprise is in the caramelized bananas; A super easy step, that totally elevates the whole experience. We recommend making this dish at the beginning of the week, and parcelling out little squares to have for the days following… it is lovely served warm, with a drizzle of honey and cup of tea.


  • 3 bananas
  • 3 tbs coconut sugar
  • 2 cups old-fashioned oats
  • 1/4 cup coconut oil + 1/2 tbs
  • 1 3/4 cups almond milk (any milk)
  • 1/2 cup maple syrup
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts
  • 1/3 cup shredded coconut (optional)
  • 1/3 cup mini chocolate chips


  • Preheat oven to 350 degrees and spray a rectangular baking dish with nonstick spray (we used a 9×6 in. dish)
  • Slice one banana into thick coins
  • Place the coconut sugar in a shallow dish or plate, and dip each coin into the sugar, so that both sides are covered
  • Place 1/2 tbs of coconut oil in a skillet over medium heat; Move the skillet around so that the oil covers the pan. Place the banana coins onto the skillet, allowing to sit for 3-4 minutes on each side
  • Once the bananas are caramelized, remove from the heat and set aside
  • In a large bowl, mash the remaining 2 bananas; Add in the oats, 1/4 cup coconut oil, maple syrup, almond milk, baking powder, cinnamon, and vanilla; stir until well combined
  • Fold in the chocolate chips, walnuts, and shredded coconut if using
  • Place the caramelized bananas at the bottom of your prepared baking dish
  • Pour the oatmeal mixture over the bananas and spread with a spatula until even
  • Bake the oatmeal for 40 minutes
