3 Ingredient Pumpkin Spice Cookies

In the spirit of being tongue-in-cheek about our recent read, Digital Minimalism by Cal Newport, we decided to go with the social media trend-heavy Pumpkin Spice.

There are two ways to make these mouthwatering, fall favorite treat of ours…

The PSL Cookie


  • Any spiced box cake mix
  • 1 can pumpkin puree (not pumpkin pie filling)
  • 1 TBS instant espresso powder
  • mini chocolate chips, melted for drizzle


  • Preheat oven to 350 degrees
  • In a large mixing bowl combine the box cake mix, pumpkin puree, and instant espresso powder
  • Using a wet spoon, drop heaping spoonfuls of batter onto a greased baking sheet
  • Bake the cookies for about 20 minutes or until golden brown at the edges (they will be more like a cake consistency rather than a crisp cookie)
  • Once the cookies have cooled, use a spoon to drizzle the melted chocolate for flare 😉

The Pumpkin Spice Chocolate Chip Cookie


  • Any spice box cake mix
  • 1 can pumpkin puree (not filling)
  • Mini chocolate chips


  • Follow the same directions as above; however instead of adding espresso powder, mix in the mini chocolate chips!
