Cracker Jack Ice Cream Bars

Just how Bex introduced the Queen to Cracker Jack in The Heir Affair, we’d like to introduce you to this delicious Cracker Jack Ice Cream Bar! A CJ crust topped with luscious vanilla ice cream, sprinkled with coconut and mini chocolate chips, and drizzled with almond butter honey sauce! To make:


For the bars:

  • 1 quart French Vanilla ice cream
  • 3 boxes cracker jack
  • 4 tbs peanut butter
  • 2 tbs honey
  • 1/2 tsp cinnamon
  • 1/2 tsp almond extract
  • 1/4 tsp sea salt

For the drizzle:

  • 1 part almond butter to 2 parts honey


  • Flaked coconut
  • mini chocolate chips


  • Pulverize the Cracker Jacks, honey, and peanut butter in the food processor
  • Pack down the cracker jack mix into a greased 8×8 pan
  • Sprinkle with sea salt
  • Push 1 quart of softened vanilla ice cream down evenly over the crust
  • Pop the ice cream bars into the freezer for 10 min, while you make the drizzle
  • In a sauce pan over medium-low heat, melt the honey and almond butter until runny
  • Drizzle the sauce over the bars and top with chocolate chips and flaked coconut; freeze for 4 hours before cutting to serve
