champagne cupcakes

In The Widow of Wall Street, Phoebe opens up a cupcake business in which all of the profit goes to charity (this is prior to Jake’s arrest of course.)

In addition to RHONY, novels about ponzi schemes, and old eps of Sandra Lee Semi-Homemade, champagne is up there on the list of things I love. Champagne cocktails, champagne gummy bears, and of course champagne cupcakes. So we thought this would be the perfect opportunity to introduce this easy version, since Ruth Phoebe was drinking mucho champagne before Bernie Jake got caught.


For the cake:

  • 1 box of white cake mix
  • 2 eggs
  • 1 cup of champagne
  • 1/2 cup vegetable oil

For the icing:

  • 1 cup chilled heavy cream
  • 1 1/2 cup powdered sugar
  • 2 tablespoons champagne OR prosecco
  • 1 teaspoon vanilla extract
  • Strawberries, gold & silver sprinkles for decorating


  • Set oven to 350 degrees and grease your mini cupcake tin (a regular size tin will work too, but make sure to adjust the baking time)
  • In a mixing bowl combine the cake mix, eggs, champagne and vegetable oil
  • Using a measuring cup, scoop batter into your mini cupcake tin
  • Bake the cupcakes for 12-15 minutes or until they begin to brown at the edges
  • Remove cupcakes to cool, and begin on your frosting combining the heavy cream, powdered sugar, champagne and vanilla extract
  • Blend all of the ingredients until the frosting thickens (note- since this is a whip cream frosting its going to be lighter/thinner)
  • When the cupcakes are completely cool, top each with the frosting, sprinkles and strawberries
