Cheese Scone Bites

You can make this recipe in under 30 minutes, and probably have most of the ingredients already in your kitchen. Another great thing about these bites, is that you can dress them up in several ways depending on what you have on hand. For example, I had some left over fig jam and chives but you could also mix in little bits of bacon or ham, or serve these up with some hot pepper jelly.

  • 1 ¼ cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1/8 teaspoon baking soda
  • 5 tbs cold butter
  • ½ cup shredded cheddar cheese
  • ½ cup milk
  • 1 tablespoon water

  • Set oven to 375 degrees and grease your mini muffin tin
  • Whisk together the flour, baking powder, salt and baking soda
  • Add the cold butter to the flour mixture, and using a pastry blender or two knives, cut in the butter until small pieces form
  • Stir in the cheddar cheese, milk and tablespoon of water (if you are adding in any other mix-ins like bacon or ham, now is the time) until just combined
  • Using a spoon, place a scoop about the size of a golf ball into your greased muffin tin
  • Sprinkle the tops of the bites with shredded cheddar cheese and bake for 15-20 min until they begin to brown
