Blueberry Lemon Loaf


  • 1/2 cup butter, slightly softened
  • 3/4 cups sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/2 tsp almond extract
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 lemon, juiced & zested
  • 1 cup blueberries (frozen is fine)


  • Preheat oven to 350 degrees; spray a loaf tin with cooking spray and set aside
  • In a large mixing bowl, cream together the butter & sugar; once combined add the eggs, milk, and extracts
  • In a separate bowl, whisk together the flour, baking powder, salt and lemon zest
  • Slowly add the dry ingredients to the wet ingredients, and mix until well combined; Add the lemon juice, and mix again
  • In a separate bowl, toss the blueberries in about 1 tbs of flour until covered; Fold the covered blueberries into the batter
  • Pour batter into the loaf tin and bake for 55-60 minutes or until a toothpick comes out clean
