Chocolate Dipped Coconut Patties

In the book Ruby Falls by Deborah Goodrich Royce, one of the most memorable moments is when Ruby (who we know as, Eleanor) goes Christmas shopping with her clairvoyant neighbor Dottie. The two stumble into a shop near Hollywood Boulevard called Eduardo’s Emporium of Elixirs and Esoterica, and while they are in there, the owner Eduardo, gives them both chocolate-dipped coconut patties. While Dottie unwraps her coconut patty and eats it right away, Eleanor tentatively takes a bite and describes it as stiff and stale.


  • 3/4 cups powdered sugar
  • 2 tbs butter
  • 1 egg white
  • 3/4 cups shredded, sweetened coconut
  • 1 tsp vanilla extract
  • 1 bag dark chocolate chips


  • Set a double boiler over medium heat and combine the butter, sugar and egg white
  • Stir until the butter has melted and combined with the sugar and egg white; a runny mixture should form
  • Remove the mixture from the heat, and stir in the coconut and vanilla; Transfer to a glass bowl and chill for 1-2 hours
  • Line a sheet pan with parchment paper
  • Remove the coconut mixture from the fridge, and begin shaping little discs of coconut (about a tablespoon of mixture for each disc)
  • Place each candy on the sheet pan and pop in the freezer for another 30 min – 1 hour
  • Right before you remove the candies from the freezer, melt the dark chocolate over a double boiler
  • Dip each candy into the dark chocolate, and place on a wire rack until the chocolate has set
