Question… why are so many egg salads flavorless?? Like, it actually boggles my mind how many delis get it wrong when it comes to this simple, and classic dish! I feel bad because I truly believe that egg salad has received a bad reputation because SOMEONE doesn’t know how to use a salt and pepper shaker.
Egg salads can be so delicious and packed with flavor. It’s also a great dish to experiment with and make your own.
That is how we came up with this little thing we like to call Egg Salad Three Ways. All you need is a dozen hard boiled eggs, some spices and pantry staples, and a crowd of hungry friends to enjoy.
Before we jump into the ingredients and steps I want to make 2 notes.
One, this recipe is PERFECT for Easter (if you celebrate) as we all know how many hard boiled eggs go to waste. It also would be V fun for a Mother’s Day Brunch, Spring luncheon with friends, or honestly and afternoon when you’re looking for something Yum to eat.
Second note… these measurements are V forgiving. When you make something like egg salad, chicken salad, etc… you can basically eye-ball it and go by taste. I promise you won’t ruin the dish.
Let’s jump in!
To make all three of the egg salads you will need 12 hard boiled eggs, peeled. If you are making one specific version, note that each of the versions require 4 hard boiled eggs.
Curried Egg Salad Ingredients
- 4 hard boiled eggs, peeled and chopped
- 1/8 cup mayonnaise
- 1/8 cup dry roasted cashews, chopped
- 1/8 cup golden raisins, chopped
- 1/2 tsp curry powder
- 1/8 tsp ground turmeric
- Salt + Pepper to tastes
In a small mixing bowl whisk together the mayonnaise, curry powder, and turmeric; In a large bowl, add the chopped egg, cashews, and raisins. Add the mayonnaise mixture to the egg, and toss until well coated; Add salt and pepper to taste
Classic Egg Salad Ingredients
- 4 hard boiled eggs, chopped
- 1/3 cup mayonnaise
- 1 tbs sweet pickle relish
- 1/2 tbs dijon mustard
- 1 tsp chives, minced
In a large bowl combine all ingredients; Toss until well combined
Skinny Egg Salad (aka Egg White Salad) Ingredients
- 4 hard boiled eggs; sliced in half, yolk removed
- 4 tsp greek yogurt
- 1 tbs chives, minced
- 1 tsp dijon mustard
- salt+pepper to taste
Remove the yolk from each egg, and chop the remaining egg whites; Add the egg whites to a large bowl and toss with the yogurt, chives, mustard and salt/pepper.
