The Easiest Apple Muffins

In the book Don’t Look For Me by Suspense Queen Wendy Walker, there is a moment when Molly, makes homemade Apple Muffins.
We wanted to share a recipe for Apple Muffins that is as simple as it gets… the basic sugar, flour, butter, and of course – apples! I am convinced that anyone can make these muffins without a trip to the grocery store, which makes me guess that they are very similar to the ones Molly makes in the book 😉
Ingredients
- 1/2 cup softened butter
- 1 cup flour
- 1/2 cup sugar
- 2 eggs
- 1 TBS milk
- 1 1/2 TSP baking powder
- 1 cup chopped Apple of choice
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Steps
- Preheat oven to 375 degrees and line a muffin tin with liners
- In a bowl using an electric mixer, cream together the butter, sugar, and vanilla
- Add the eggs, milk, flour, baking powder and spices; mix until well combined
- Fold in about 3/4 of the chopped apples, and begin filling each muffin tin; you can take the leftover apples and top each muffin
- Bake for 20-25 minutes and enjoy!
