Shortcake Jars

I know what you’re thinking… mason jars are sooooo 2015. HOWEVER this combination never goes out of style! Cold strawberries, subtle-yet-sweet cream, and a fresh biscuit. As Queen Ina would say, how easy is that?

As the Fourth of July is approaching we have added blueberries to our jars to make them extra festive. We also would like to note that this dessert looks absolutely adorable served in mason jars, however if you do not have any OR if you are anti, any clear bowl is fine (you want to be able to see the layers!)

Ingredients

For the biscuits:

  • 1 box of traditional Bisquick
  • 3 TBS salted butter
  • 1 TBS honey

For the cream:

  • 1 cup heavy whipping cream
  • 2 TBS sugar
  • 1 TSP vanilla extract
  • 1/2 TSP almond extract (optional)

For the filling:

  • Sliced fresh strawberries
  • Fresh blueberries
  • You can also try this recipe with peaches, cherries, or tropical fruits!

Steps

  • Bake the Bisquick drop biscuits according to box directions
  • In a small bowl, melt the butter; once the butter is melted, whisk in the honey
  • Remove the biscuits from the oven and brush the tops with the honey butter; set aside to cool
  • In a large bowl using an electric mixer, beat together the heavy cream, sugar, almond and vanilla extracts until whip cream begins to form
  • Once the biscuits are cool, begin assembling the shortcake jars; We found that the best presentation is as follows: berries, whip, bits of the biscuit, more whip, topped with berries
